Chicago Eats – Owl and Lark

I’ve found heaven on earth ladies and gentlemen and it’s called Owl and Lark. Located in the La Grange (Chicagoland) area this cute little spot is the perfect combination of quick bites and sit down staples. After seeing tons of hype about this place on social media, I knew I had to make my way towards it.

The menu at Owl and Lark really took me by surprise. They had salads, smoothies and bowls, dairy-free options, and a variety of different breads to choose from for your avocado toast. Which by the way, is the bomb diggity.

I ordered a 16 oz matcha latte with oat milk (considerably my new obsession). Oat milk gives the drink a natural flavor. To me, it’s like an upgraded version of regular milk. It was light and flavorful + the perfect amount of sweetness. Totally frothy and blended together nicely. I loved it!

To compliment my hot beverage, I also splurged on the pumpernickel bread avocado toast. The avocado wasn’t too overwhelming – it was evenly spread across and topped with pickled onions, red pepper flakes, arugula, and watermelon radish. The watermelon radish atop everything was, to be honest, a bit much. I was intimidated at first but after a few bites, that fear was gone and filled with flavor!

Besides the wonderful food and drinks this place had, I also just have to briefly touch on the atmosphere. This gem was bright, filled with character, and modern with a tiny amount of rustic flair. If my personality and style was a coffee shop, it would be this.

Owl and Lark, thanks for creating such an adorable place for my hubby and I to have lunch. Everything about our experience was perfect and I’ll 100% be back for more! Friends, if you live in the Chicagoland area, put this spot on your list to visit! I promise you will not regret it!

The Easiest Gluten-Free Berry Pancakes

Hello breakfast enthusiasts! Today I’ve got a recipe you’re going to go head over heels for. I was scouting the grocery store a few days ago looking for healthier options for the kitchen and came across a variety of flours. Everything from coconut to almond, the options were endless.

Something that caught my eye though was the gluten-free package from Bob’s Red Mill brand. It’a a gluten-free pancake mix featuring a giant stack of flapjacks on the front. I couldn’t resist buying the pouch to try out!

I’ve got to be honest by saying, I’m not a huge fan of pancakes or waffles. Anything too carb-y and sugary just isn’t up my alley. However, I thought I’d put a twist on these bad boys to make them a little more delicious. It was definitely a splurge day and I wanted them to genuinely taste like regular pancakes despite being gluten-free.

Things We Need

1 1/2 cups Bob’s Red Mill Gluten Free Pancake Mix

1 Cup of Milk

2 Eggs

2 Tbsp Vegetable Oil

Blackberries

Blueberries

Bowl

Fork or Whisk

Measuring Cups

Skillet

Start by preheating your skillet to medium heat. Make sure your chosen pan is non-stick so our pancakes don’t fall apart upon completion.

Begin pouring wet ingredients into bowl (eggs, milk, oil). Stir thoroughly until mixture is combined.

Slowly start to pour flour into wet ingredients being sure to whisk when adding to avoid clumps in the batter.

Take a handful of blackberries and add them to the batter. Smash the berries until color turns to a light purple. Feel free to add more if needed.

Once the mixture is thick and smooth take a 1/4 measuring cup and pour a small pancake onto your skillet. Be sure to watch the pancakes as they cook extremely fast (typically a few minutes on each side). Flip pancakes when bubbling is seen and browning is noticeable.

Before plating, add a few blueberries to the tops of each pancake for flavor. It will make for a sweet surprise when you bite into your finished product! After this, you can begin to move your cakes onto a separate dish. Be careful as these will be very hot!

Serve with maple syrup or honey along with a few scoops of fresh fruit! A blend of strawberries and raspberries would be tasty too! Choose your favorites and be creative!

Easy Banana Oatmeal Recipe – Healthy Breakfast

Breakfast tends to be something I neglect. I’d say 90% of mornings I’m grabbing a fruit or carb to go (very low in calories & protein or extremely high). Something simple, fast, and not necessarily nutritious. But lately I’ve been trying to address that.

It hasn’t been easy but I’m finding new ways to start my morning on the right foot. Beginning with what I put in my body after crawling out of bed. Let’s be real, it’s a struggle.

Everyday is a fresh start

Today, I wanted to share the easiest banana oatmeal recipe I’ve been eating on the daily. It fits all the needs I’ve been searching for in a breakfast and keeps me full until my next meal. It’s cheap, tasty, and best of all quick to prepare. Read below to get the full recipe!

Things We Need

Rolled Oats – I recommend Quaker 1 Minute

1 Banana

Cinnamon

Milk of choice

Almond Butter

Start with your favorite blend of rolled oats. I like a thicker and more crunchy oatmeal so the kind I chose is a little on the larger side. Add 1/2 cup to a cup of oats into a microwave safe bowl.

Carefully pour your choice of milk into the bowl until the liquid is barely covering the top of the oats. Less is more so feel free to start with less liquid and add later if you need.

Cut your banana in half and begin mashing one half into the oatmeal mixture. This will make sure our breakfast has a strong banana flavor.

Microwave on high for 2 minutes and 30 seconds.

Stir mixture and return to microwave to heat for another 1 minute.

Add in cinnamon as desired and almond butter for taste.

Take the rest of the banana we saved from earlier and slice that on top of the prepared oatmeal.
