The BEST Avocado Chicken Wraps 

As many of you know, I’ve been trying to expand my cooking skills. With my husband deployed, I’m beginning to realize how much extra time I have on my hands. Time I’ve been able to use towards my new two favorite things, blogging and preparing my own food! 

Stating the obvious, I’m not sure if this is the Pinterest in me talking or not but I’m pretty sure I’ve created the most delicious chicken wraps ever. Who wants to learn how to make em?! Today, I’m sharing my top secret,, best avocado chicken wrap recipe with all of you! So easy to make and my recent go-to healthy lunch for work! Let’s get started! 

Things We Need

  • Cherry Tomatoes 
  • Spring Green Mix 
  • 1 Avocado
  • Mini Chicken Fillets 
  • Wrap Or Tortilla Of Choice 
  • Briana’s Honey Mustard Dressing 
  • Garlic Powder 
  • Salt 
  • Pepper
  • Medium Sauce Pan 
  • Olive Oil

1. In a medium sauce pan, set heat to low and prep pan by applying small amount of olive oil. 

2. Once pan begins to warm, set mini chicken fillets in a row side by side. Top with garlic powder, salt, and pepper. Increase heat gradually as chicken begins to cook. Allow chicken to cook evenly and slow. Turning the heat up too quickly will cause chicken to burn and get dry. 

3. Flip chicken when browning begins to occur. Cover with garlic powder, salt, and pepper like before. 

4. While the opposite side of the chicken is cooking, start preparing the veggies and base of wrap.

5. Cube the inside of the avocado and slice the tomatoes making sure all are in bite sized pieces. Line the wrap down the middle with the fresh spring salad mix and veggies.

6. Remove chicken from pan once fully cooked. Cut into small pieces and apply on top of tomatoes, greens, and avocado. Also, if you’re looking for a crispier taste, cut your chicken while still in the pan near the end of its cook time. So good!

7. Drizzle salad dressing across the wrap to your liking. But be careful, this specific brand doesn’t have a small hole at the top for easy pouring! We definitely don’t want a soggy meal filled with too much of one ingredient. 

8. Cut in half if desired and serve with a pickle, veggie straws, or both! The left over chicken I had was used during the week to make multiples of this recipe. You could also use excess chicken as a topper for a garden salad. Yum! 

Food For Thought

I love this lunch option because it’s fast and virtually anyone can make it! The tangy taste of the dressing added at the end really gives it that needed kick. However, if you’re not a fan of honey mustard and would prefer something else I suggest blue cheese or spicy chipotle! There are so many different variations you can make out of these simple base instructions. Give it a shot and put your own spin on it! I’d love to see your creations!

Foods I’ve Been Loving

Hi guys! In today’s post I wanted to highlight some of the foods I’ve Been absolutely obsessed with lately. The majority of these options are quick, simple, and so tasty! I knew I had to share them with all of you to enjoy with me! What’s been your favorite snack?

Stiggi’s Yogurt 

This non fat, low-calorie, protein packed snack has been my fuel every morning. Not only does it fill you up, it also tastes amazing! My two favorite flavors have been Vanilla Bean and Spiced Pear. These go real nicely with chopped strawberries, sliced bananas, blueberries, a little honey or agave, and crumbled nuts. Give it a try when you’re on the go and want something a little different!


Continuing on with breakfast foods, I’ve really been obsessed with Einstein! A majority of their bagels are fluffy and light which I love. It can be difficult to find good bagels that aren’t too doughy or thick. These are just right. My must-have order has been a honey whole wheat with veggie shmear. But honestly, everything on their menu is so delicious. My mouth is watering just thinking about it.

Lean Cuisines

Recently, I’ve been trying to branch out by finding new ways to cook at home and make meals for myself without doing anything fancy. Some nights I don’t have any left over energy from my work day to take the time and prepare something. With that said, Lean Cuisine has been my life saver and it’s becoming super easy to stay balanced with my food choices!

I’m not saying this should be an everyday option. But LC’s have really stepped up their game. Most of their meals are filled with key nutrients everyone needs in their diet. The entrees are light yet full of flavor. My recent favorites have been the sweet potato mash with turkey and stuffing, white cheddar mac and cheese, butternut squash ravioli with veggies, and all of their single serve pizzas.


I’m definitely evolving into a fruit and veggie addict. Specifically snap peas, cherry tomatoes, strawberries, bananas, and raspberries have been a daily part of my diet. These are great to throw on top of a salad or eat sliced. Another way I like to eat these little guys are through the blender! I’ve taken ingredients like kale, frozen fruit, and a little almond milk to create one delicious smoothie or bowl. It’s quick, easy, and tastes good.

Avocado Toast 

The holy grail of all breakfast foods. You can never go wrong with some avocado toast. I’ve been expanding my toast taste buds to the limit lately and have been loving throwing things on top of my breakfast. To really make the flavor pop, try experimenting with different varieties of bread. Multi-grain is perfect for this! I also like to top mine with a little garlic salt, pepper, hot sauce, sliced cherry tomatoes, and an egg. This simple breakfast turns into so much more once you add extra ingredients.

Wraps And Roll-Ups

Pinterest is to thank for this newly discovered obsession of mine. I found some recipes recently for chicken, turkey, or veggie wraps and thought I’d try them out for myself. It’s so much less expensive to make wraps at home rather than buying pre-made ones from the store. I’m saving money and I’m able to customize what I’d like to go in them! 

Roll-up snacks are just as great! One of my favorites have been sliced fruit with Nutella or peanut butter. You lay your chosen spread base down, add fruit, and roll. From there, you can choose to take it on the go or cut it into bite sized pieces like a sushi roll! So easy, so cute, so different and fun to eat! 

Cook With Me: Sweet & Sour Meatballs

Hi all!

As of late, I’ve been trying to cook more in the kitchen! Creating my own meals and experimenting with ingredients has become a ton of fun. I’m really enjoying learning what works, what doesn’t, and what I like to make.

This recent interest in the foodie world, has sparked some curiosity on Pinterest and I’ve been scoping out recipes like crazy. One of the most delicious I came across were sweet and sour meatballs! I’m a fan of tangy tastes and a salty but sweet flavor. This appetizer sounded right up my alley! I scrolled through my options and finally came across a simple recipe I thought I could manage.

In this post, I’ll be sharing the recipe I used along with some minor tweaks I’ve made along the way. If you’re into this type of blog post, let me know! Things We Need 

1 Egg

1 pound ground beef

1/4 cup bread crumbs

1 onion diced or minced whichever you prefer

1 cup brown sugar

3 tbsp flour

1 1/2 cup water

1/4 cup distilled white vinegar

3 tbsp soy sauce

1 minced green pepper


  1. Start by mixing together ground beef, egg, onion, green pepper and bread crumbs in a medium bowl. Use clean hands to thoroughly combine ingredients.
  2. Once mixture has been worked together, shape into small bite sized balls. Refrigerate meat forms for 20 minutes.
  3. In a large sauce pan, combine the brown sugar, flour, vinegar, water, and soy sauce. Fully mix the glaze until all ingredients are molded into one.
  4. Add refrigerated meatballs into pan and bring to boil. Depending on how large your pan is, be sure not to stick too many in. Bring to a boil and simmer for at least 30 minutes or until done. Make certain to stir frequently and add more water if needed.
  5. Plate these little guys with some white rice or cooked vegetables. They’re the perfect dish to share with friends!
